Pacific rockfish is a lean fish that has a mild, sweet flavour with a nutty accent. The flesh has a medium-firm texture with medium-sized flakes.
When cooking whole, score the fish two to three times crosswise through the thickest flesh, near the head. The whole fish can be broiled, grilled, pan-fried, steamed, baked or deep-fried.
Fillets are good pan-fried or steamed. Similar fish include sea bass, halibut or striped bass.
As well as being an excellent source of heart-healthy Omega 3’s, Pacific rockfish is one of the top dietary sources of potassium which helps prevent high blood pressure.
Fun fish fact: Pacific rockfish play dead or rather float motionless mid-water pretending to be dead.
