Spicy Albacore tuna poke bowl

Ingredients:

Tuna:

  • 1/2 lb sushi grade Albacore tuna from your local Fisherman’s market, cut into 1/2 inch cubes
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp sriracha

Spicy mayo:

  • 2 tbsp light mayonnaise
  • 2 tsp sriracha sauce or try sriracha aioli by Stonewall Kitchen available at your local Fisherman’s Market

The bowl:

  • 1 cup cooked short grain brown rice or white sushi rice
  • 1 cup cucumbers, peeled and diced into 1/2 inch cubes
  • 1/2 medium avocado, sliced
  • 1 tsp black sesame seeds
  • Soy sauce (optional)
  • Sriracha for serving (optional)

Directions:

  1. Cook your rice as per the instructions on the package.
  2. In a small bowl, combine the mayonnaise and sriracha, thin with a little water to drizzle
  3. In a medium bowl, combine tuna with soy sauce, sesame oil and sriracha. Gently toss to combine and set aside while you prepare the bowls.
  4. In 2 bowls, layer 1/2 the rice, 1/2 the tuna, avocado and cucumber.
  5. Drizzle with spicy mayo and sesame seeds and serve with extra soy sauce on the side if desired.
